Why is it that whenever I see a documentary on automatic electric cars, when they refer to Tesla they show some guy sleeping behind the wheel, driving his car down the freeway and they never mentioned that Tesla has the added safety benefit of requiring drivers using auto pilot to always have their hands on the wheel creating torque?

Only with the latest software release has Tesla addressed the ways of bypassing the safety feature you mention above. Now the car can detect if a safety bypass wheel weight is in use to simulate an active driver. Tesla also is using the weight sensor in the seat and the driver cameras on available models.
