255/35R19 is -1.9% diameter vs M3P stock 235/35R20.
255/40R19 is +1.9% diameter vs M3P stock 235/35R20.

That's the same slightly big but not drastic change in either direction. Personally I'd rather have the extra diameter and sidewall, *if* no clearance issues. But it depends on your priorities. Larger diameter means slightly taller drive ratio at the wheels, and slightly less optimistic speedo, and maybe slight under measurement on the odometer. All of those are pluses for the Model 3 in my book as long as we're talking small changes.

Officially 255/40R19 is 27" diameter and I believe that should fit (don't know if your lowering springs would change that), though I've read here that a few tire models of that diameter run large and can cause fitment issues.

You could also consider 245/40R19. That would be closer to stock diameter than either 255 option. And 245 is considered normal for 9" wide wheels. Though I'd still prefer 255/40R19.
