I'm scheduled with my local (3 hour drive away) service center for next Monday. Will I be able to safely drive and supercharge my car with the AC not working? Will I at least get warning bells and messages if things begin to overheat?

Yes, I've heard of this before, and yes, you can certainly drive that way, without the A/C. The car definitely will self-limit if it needs to. You will for sure see reduced Supercharging speeds because the car closely monitors the internal battery pack temperature and will keep it within safe limits. It can do some cooling just with the radiators on the front edges, but if it can't also use the A/C to chill it, you probably won't be able to get above about 50-70kW, which isn't too bad.
