Nicely done! So now we need to sniff 3 CAN buses for all the signals, right? Does CANserver have the ability to piggyback off another one to consolidate all messages, or would I need to connect an app like tesLAX separately to two different ones?

Do you really need 3? Is there a meeting for people who want that much data? :)
Choose two for now, I'll think of some solution in the future.

We now have a guy in Germany, which could drive way below zero, and was able to draw 119KW from the battery.

Legit?

Totally possible even with the 100kWh battery. Either start fully charged at 10000 feet (preferably with a lot of weight on board - unladen it is 1.8kWh/1000 feet) and end at sea level, or just get a tow en route.

Or a 50 Km/hr tailwind plus the above...

Fun fact...I'd pick up a few percent efficiency going downhill from Costco (US warehouse Store) with 100 kilos of groceries.
