I'd take it over wood.
That white on white looks amazing. Of course, I say that with a white on white X. And a white on grey S (white interior wasn't available). So maybe it's just a personal preference.
hopefully if white interior + PUP = wood dash, that wood would be a darker version compared to the current lighter colored wood on the production cars.. the contrast would work better (I think?)

Definitely not. But I'd also prefer a darker wood and a different wood grain than just that plain, boring, straight, light-colored junk. I'd also probably prefer any dark(ish) color other than white. Just don't like it on the car.

Here are a couple of glimpses of a red TM3 on US 101 in Mountain View earlier today. I apologize for the dashcam quality, but I feel that this thread needs more content.
I was using AP so I glanced over to see who was driving: no one I recognized. But he was wearing iPhone-style headphones with the microphone held close to his mouth. Do you suppose he doesn't care for bluetooth? Or maybe it has software problems in this early release?

Looks like there was a white Model X to the right of those two (your left). Would be nice if was also a red one and you got a photo of the 3 together
Is it just me or is the panel alignment on the red 3 still rather crappy? Bumper to guard alignment at the RH headlight is the most noticeable.
Is the S a signature red and in need of a good detailing , or multi-coat red and owned by someone that needs to be shot for letting it get like that?
